Air Fried Spring rolls are popular in many Asian cuisines. They consist of ingredients such as shredded vegetables, cooked meat, or seafood (such as shrimp or chicken) wrapped in thin spring roll sheets and then fried. But this recipe uses the air fryer method, which is the healthiest with little or no oil.
Add oil to a pan over medium heat. Add the chicken and break it up into small pieces.
Stir fry until fully cooked.
Add the rest of the ingredients and keep stir-frying for about 3-4 minutes until the veggies sweats up.
Ensure some of the water from the veggies and chicken dries off. If there is too much water, the rolls will become soggy while rolling.
Place one spring roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape). Place about 2 tablespoons of the chicken filling in the center of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold the sides towards the center. Roll tightly upwards to seal the spring roll. Brush the top corner with egg wash to seal the roll.
Repeat the process with the remaining wrappers and filling.
Preheat the air fryer to 400 degrees F.
Place the rolls into the air fryer basket leaving ½ inch of space between them.
Oil spray or brush oil on the rolls.
Airfry at 400F for 15 minutes, flipping the sides halfway through the cooking time. When you flip the sides, apply oil again. Cook until they are golden and crispy.
