In a large bowl, toss together the lettuce, cucumber, avocado, carrots, cherry tomatoes, red onion, and hard-boiled eggs.
1 head Lettuce, 1 English cucumber, 1 cup Cherry tomatoes, 1 small Red onion, 1 small Ripe avocado, 2 Hard-boiled eggs, 1 cup Baby carrots
Whisk together the olive oil, vinegar or lemon juice, honey, minced garlic, and salt and pepper to taste in a small bowl.
¼ cup Olive oil, 1 tablespoon Vinegar, 1 tablespoon Honey, 1 Garlic clove, ¼ teaspoon Italian seasoning, Pinch of salt and black pepper to taste
Drizzle the dressing over the salad and toss gently to combine.
Serve or chill and sserve later.
Notes
For best results, use extra virgin olive oil.
Choose veggies that are ripe and fresh. Discard any that look blemished.
Chop up the veggies in the size of your personal preference. I kept them chunky, because that's what I like.
If you love pasta salads, consider adding some cooked pasta into the mix too. Make sure the pasta is al dente, and use chickpea pasta or multigrain pasta to make the salad healthier. You can also add cooked quinoa into it!
You can also experiment with different toppings! Add some croutons or mixed roasted seeds on the top, right before you serve for a bit of extra crunch.
