The salad is filling and versatile. It pairs well with many different mains and works well as a side dish every time.
The salad dressing is super simple and refreshing and barely takes any time or effort to make.
The salad is low in calories and high in fiber, which makes it an excellent choice for anyone who's trying to include more healthy foods in their meals consciously.
Recipe Ingredients
Veggies: You'll need fresh lettuce, cherry tomatoes, red onion, English cucumber and baby carrots.
Garlic: For that savory flavor. Use garlic powder if you don't have fresh garlic.
Eggs: Hard-boiled egg for the protein.
Avocado: A fresh avocado will add a nice bit of richness to the salad and a punch of good fats. Pick one that's ripe and doesn't have soft spots.
Dressing: For the dressing, you'll just need olive oil, honey, vinegar, Italian seasoning, salt, and ground black pepper.

- I used honey for sweetness, but you can also add brown sugar to the dressing if you don't want to use honey.
- You can experiment with different flavors by adding other seasonings to the dressing. Cajun spice and cayenne are great additions if you prefer something spicy.
- If you don't have vinegar, add lemon juice to the dressing to bring that tanginess and balance the other flavors.

Storing Leftovers
If you have some leftover lettuce cucumber tomato salad, transfer it to an airtight container and refrigerate it for up to a day. I wouldn't recommend storing your salad for more than a day, as the lettuce and other veggies can quickly start to wilt.

- You can also experiment with different toppings! For a bit of extra crunch, add some croutons or mixed roasted seeds on top right before you serve.
