- ½ teaspoon Salt
- ½ teaspoon Blackpepper
- 1 teaspoon Italian Seasoning
- 1 teaspoon Garlic Powder
- 3 tablespoon Olive oil
For the Sauce
- ¼ cup Butter
- 1 tablespoon Lemon Juice
- ½ tablespoon Hot sauce
- ½ teaspoon of each Fresh thyme rosemary and parsley. rosemary and parsley. (Finely chopped)
- ¼ cup Water or broth or White wine
- Pinch of Salt and pepper to taste

- Pat dry the fish with a paper towel.3 Fish Fillets
- Combine and stir the ingredients in a bowl, except for the oil, to season the fish.1 teaspoon Cajun Seasoning, ½ teaspoon Salt, ½ teaspoon Blackpepper, 1 teaspoon Italian Seasoning, 1 teaspoon Garlic Powder
- Sprinkle the seasoning generously on both sides of the fish using your hand to gently pat it so that the seasoning sticks well to the fish.
- To a pan over medium heat, heat the oil, then sear each side of the fish for about 5 minutes. This will depend on the thickness of the fish.3 tablespoon Olive oil
- When the fish is fully cooked and flaky, remove and set aside. Remove any burnt bits from the pan and throw; this is to avoid the sauce from being bitter.
- Melt the butter, add the remaining ingredients for the butter sauce and simmer on low heat for 2 minutes.
