Mediterranean Chickpea Salad is a refreshing and nutritious dish made with chickpeas, tomatoes, onions, cucumbers and a simple lemon vinaigrette dressing with fresh herbs like oregano and parsley.
Make the Dressing; Combine the olive oil, Dijon mustard, honey, lemon juice, garlic salt and black pepper in a small bowl, then stir to combine.
Prep the Ingredients: Drain and rinse the chickpeas. Dice or slice the cucumber, tomatoes, red bell pepper and onions. Finely chop the mint and parsley. Add all the ingredients in a large bowl.
