Peel and cut plantains into rounds of about ¼ inch thick.
Deep fry plantains over medium heat until golden brown. Remove from the oil and place on an absorbent paper.
Add 2 tablespoon oil to a pan. Sauté onion for 1 minute. Add mixed veggies, celery, parsley, and sausage and stir fry until the veggies lightly soften. Remove and let it cool for about 3-5 minutes.
Add the eggs to a medium bowl and lightly beat. Add the cooked veggies mix, garlic powder, salt, black pepper, bouillon and chilli flakes. Whisk to combine.
Using A Stove Top
Add 1 tablespoon oil to a pan with a wide bottom over medium-low heat, pour the egg mixture inside and place the fried plantains on it. Note: You must hurry up to place the plantains so the egg doesn't cook and firm up like the plantains will not stick.
Cover and let it cook on low heat for 20 minutes till the eggs cook and become firm.
Cut and serve hot.
Using an Oven
Preheat oven to 350℉ and lightly grease a pan with a wide bottom.
Pour the egg mixture into the pan and place the plantains on it.
Put it in the middle rack of the oven and bake at 350℉ for 30 minutes until the eggs firm up.
Cut and serve hot.

Make sure you allow the sauteed veggies to cool down completely before you add them to the eggs as the heat can scramble the eggs.
Always grease the pan to avoid sticking. You can use a non-stick pan or a good quality cast iron skillet.
If you're not a fan of deep frying, you can choose to air fry or bake the plantain slices too!
Make sure you cook the plantains on medium heat- if the heat is too high, they will end up getting burned, and if it is too low, it won't crisp up enough.
When slicing the plantains, remember to slice them in rounds of even thickness. This will ensure they're all perfectly cooked.
Arrange the plantains on the egg mixture quickly, before the egg starts to cook.
