What I Love About this Recipe
It's a simple, easy and effortless no-bake dessert that you can make for Christmas.
It's delicious and so much fun to make over the holidays. You can even get your kids to help you with making it!
It's customizable! You can tweak and play around with the mix-ins and toppings to suit your preference and come up with a unique twist on this classic sweet treat.
Ingredients For the Grinch Rice Krispie Treats Recipe
Rice Krispie cereal: You'll need just a few cups of your classic Rice Krispie cereal.
Mini marshmallows: I used mini marshmallows, since melting them is so much easier. You can, however, use the regular or even jumbo marshmallows if that's what you have at hand.
Butter: I love using salted butter, just to balance out the sweetness from the marshmallows. You can also add an extra pinch of salt if you like.
Green food coloring: Use gel food coloring if you can. It has the perfect bright color and is so much easier to use too.
Sprinkles: I found some really beautiful red heart shaped sprinkles, which I used here. You can totally use any other kind of festive sprinkles you can get your hands on. Red M&Ms work just fine too!
See recipe card for quantities.
Variations & Substitutions
- I cut these Rice Krispie Christmas treats into squares, but you can experiment and try out different shapes too! I love using my heart shaped cookie cutter for this recipe!
- If you want to lend these Christmas treats an extra bit of oomph, drizzle some melted white chocolate over them before topping them with the festive sprinkles.
- I used the classic Rice Krispie cereal here, but if you can get your hands on the holiday themed ones, you can use them too! Just skip adding the green food coloring into the marshmallow mixture, and let the colors of the Rice Krispies shine through.
How to Make Grinch Rice Krispie Treats
To make these Rice Krispie treats, start by greasing your baking dish with cooking spray or melted butter. You can also line it with parchment paper if you want to- just leave a bit of overhang on both sides to pull out the set Krispie Treats easily.
- In a large pot, melt butter over low/medium heat.
- When butter is melted, stir in marshmallows.
- Continue to melt over low/medium heat until the mixture is smooth. Be careful not to overheat this mixture, as it will burn quickly.
- Add a few drops of green gel food coloring until desired color is reached.
- Stir in Rice Krispie cereal and mix with a rubber spatula until all the cereal is evenly coated. Transfer this to the prepared baking dish and push down with a rubber spatula or your hands until it is flat and even on the top.
- Let these cool for 30 minutes. Cut into desired sizes, and place red hearts where desired and enjoy!
Storing Leftovers
These homemade Christmas Rice Krispie treats have a shorter shelf life, since they don't have any preservatives added in. But that's good- they'll still last for 3-4 days when stored at room temperature. Just be sure to pack them in a Ziploc bag or in an airtight container to keep them fresh.
Tips & Tricks to Make Christmas Rice Krispie Treats
- When adding the green food coloring, remember to add just a bit extra- even after the marshmallow mixture looks like it has that perfect green color. This is because it'll actually lighten a bit when you add in the Rice Krispies.
- Once you add the Rice Krispies in, move quickly and mix everything together - as it can start to harden super fast.
- Allow the treats to rest at room temperature and harden. You don't need to refrigerate these!
- If you can't find sprinkles, just mix some red food coloring and icing, and pipe the red icing on the top of each piece.
- If you love chocolate-y treats, you can also partially or fully dip them in melted chocolate, and then top them with the sprinkles.
- If you're having trouble cutting these, you can grease your knife or cookie cutter with some cooking spray or butter to keep the mixture from sticking to the surface.
Serving Ideas & Suggestions
You can enjoy these Rice Krispie Christmas treats anytime you're craving for a little sweet treat during the holidays- these take absolute no time to come together!
I love making my easy baked lamb chops and Jamaican rum cake during the holiday season, and also my all time favorite carrot cake loaf. These chewy treats will be perfect teamed up with them if you're just looking for something that's quick and doesn't need a lot of effort, but still looks fantastic!
