Accra Banana is deep-fried grated cassava (Yuca roots) and mashed bananas, which are sweet and chewy yet crunchy. They are heavenly, especially when served warm with some pepper sauce.
With only four ingredients, you have no stress making these. I usually make these from scratch, but when I saw frozen grated cassava at the grocery store, it became my go-to every time. It reduces cooking time, and it is the best.
If you don't have the frozen grated cassava, read along for some helpful tips.
If Using Whole Cassava or Yuca Roots,
- Peel and wash very well. Use a grater to grate them. If using a food processor or blender, cut into small chunks before blending.
- To blend, you need a strong blender with little water for the blade to move easily.
- Transfer to a squeeze bag and squeeze out excess water. Discard the water.
If Using Frozen Grated Cassava,
- All you need to do is to squeeze out the excess water using a squeeze bag. This is the frozen grated cassava I always use, and it can be found in most Asian grocery stores.
Ingredients Used:
- Grated Cassava
- Overripe bananas for sweetness.
- Salt to taste
- Oil to deep fry.
How To Make Accra Banana

Transfer the grated cassava to a squeeze bag and squeeze excess water. Discard the water.
- Peel and mash the bananas. Add the cassava and salt to the mashed bananas and mix until well combined.
- Scoop about a tablespoon of the batter onto your palm and fold or shape it into a ball of about 1 inch.
- Place it on a tray as you roll. They shouldn't touch each other.
- Start frying the balls, ensuring you don't over-crowd the pot. Do not stir the balls immediately. Wait for about 30 seconds for them to take shape before stirring.
- Keep stirring for all of them to have the same colour for about 5-8 minutes until cooked.
- Remove and place on an absorbent paper and serve when cool with pepper sauce.
Important Recipe Tips
- Always squeeze out excess water if need be. If not, you will end up with a mushy batter that is difficult to roll.
- Because the batter is soft, you can scoop with a small ice cream scoop into the pot of oil or gently roll it in one palm, like in the attached video.
- Do not stir the balls immediately after you drop them into the oil. Wait for about 30 seconds for them to take shape before stirring.
- Do not overcrowd the pot.
- Bananas are sweet enough, so you don't need extra sweetener. Overripe bananas are the best for accra.
- You can add flavours like vanilla or nutmeg.

Storage: Any leftovers should be in an airtight container or Ziplock bag at room temperature for one day. Put in the refrigerator for up to 3 days and reheat in the microwave for 30 seconds to 1 minute. If microwaved for a longer time, it becomes rubbery.

- Transfer the grated cassava to a squeeze bag and squeeze excess water. Discard the water. Note: If yours doesn't have a lot of water, skip this step. I used the frozen cassava, which had lots of water.
- Pour oil into a pot about 3 inches deep and let it heat up to 375 ℉ over medium heat.
- Peel and mash the bananas. Add the cassava and salt to the mashed bananas and mix until well combined.
- Scoop about a tablespoon of the batter onto your palm and fold or shape it into a ball of about 1 inch.
- Place it on a tray as you roll, they shouldn't touch each other.
- Start frying the balls, making sure you don't over-crowd the pot. Do not stir the balls immediately. Wait for about 30 seconds for them to take shape before stirring.
- Keep stirring for all of them to have the same colour for about 5-8 minutes until cooked.
- Remove and put on an absorbent paper for it to cool.
- Serve with some pepper sauce.
