  • 2 Fish fillets
  • 6 sprigs Thyme chopped
  • 3 sprigs Rosemary chopped
  • 1 teaspoon Oregano dried
  • 2 teaspoon Parsley chopped or dried
  • 4 Garlic cloves minced or chopped or 2 teaspoon paste
  • 1 teaspoon Basil chopped (optional)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 1 tablespoon Sweet chilli sauce
  • ½ teaspoon Salt
  • ½ teaspoon Blackpepper
  • ¼ cup Olive oil

For The Veggies

  • 1 cup Cherry tomatoes
  • ½ cup Olives pitted
  • 1 medium Onion diced
  • 1 Zucchini diced

Instructions

  • Preheat the oven to 400℉ and lightly grease or line a baking dish.
  • Add all the ingredients except the veggies and fish to a bowl and combine well.
    6 sprigs Thyme, 3 sprigs Rosemary, 1 teaspoon Oregano, 2 teaspoon Parsley, 4 Garlic cloves, 1 teaspoon Basil, 1 teaspoon Lemon zest, 1 tablespoon Lemon juice, 1 tablespoon Sweet chilli sauce, ½ teaspoon Salt, ½ teaspoon Blackpepper, ¼ cup Olive oil
  • Rub the marinade on both sides of the fish generously and set aside. Save ½ tablespoon of the marinade.
    2 Fish fillets
  • Add the veggies into the remaining marinade and mix well with a spoon until they are well coated.
    1 cup Cherry tomatoes, ½ cup Olives, 1 medium Onion, 1 Zucchini
  • Pour the veggies into the baking dish, then place the fish on top.
  • Scrape any remaining marinade from the bowl and pour it on the fish.
  • Bake in the middle rack of the oven at 400℉ for 15 minutes. Baking time will depend on how thick your fillets are.
  • Cook until the fish is flaky or a thermometer reads 145℉ internal temperature.
  • Remove from the oven and let it rest for about 5 minutes, then serve,

    Totally worth having to refill our spice shelves. The seasonings worked well on the tilapia and my salmon. When I found enough veggies to make that part of the recipe it was an even bigger hit. Hubby said he thought he'd never eat an olive but had now found their purpose in our fridge and boys wanted extra on their second helpings. Thank you!

    This is an excellent dish! We loved the flavors, and it's really quick and easy to make. I used tilapia that was fairly thick, so I baked it an extra 5 minutes. We aren't olive fans, so I substituted extra veggies (squash and zucchini), and I substituted honey and red pepper flakes for the sweet chili sauce, and it was really good.
