This Green Seasoning is a blend of fresh herbs, aromatics and spices. It's common in the Caribbean, African and American cuisines, although the ingredients may vary depending on personal preferences. Once you try this recipe, you will never look at the store-bought version.
Adding pimento seeds, which is optional, makes it a complete Caribbean Green Seasoning. This vibrant paste can be used as a marinade and seasoning for seafood, meats and poultry. It also adds flavour and aroma to soups, stews, casseroles, and other dishes.

Important Recipe Tips and Variations.
- Make sure the herbs are washed very well because they tend to have dirt and debris.
- If using a bender, chop them and add little water to blend easily.
- If using a food processor, you can put everything whole and process till smooth or slightly coarse.
- Always adjust the hot peppers according to preference.
- You can add other herbs like rosemary, oregano, red bell peppers, basil and many more.
- Add a little lemon juice for preservation purposes and to maintain the vibrant colour of the herbs. This is optional. I didn't use it.
- Use 1-3 tablespoons per recipe, depending on the amount and taste preference.
NOTE: Green seasoning isn't for Caribbean recipes only. It's versatile and can be used in many recipes.

- Wash all the ingredients perfectly and deseed the bell pepper.
- Transfer all the ingredients to a food processor and process till smooth or slightly coarse.
- Transfer into a jar or bowl and cover tightly.
Storage
Preserve in the refrigerator for up to a week. Or transfer it to ice cube trays and freeze for 3-5 months.

Equipment
- Food Processor or blender
Ingredients
- 1 bunch Parsley
- 1 stalk Celery
- 1 bunch Cilantro
- 10-12 Garlic cloves
- 4 Scallions green onion
- ½ large Onion or 1 medium size
- 1 large Green bell pepper
- 1 thump size Ginger
- 2 Scotch bonnets adjust accordingly
- 5-7 Pimento berries
- 10 sprigs Fresh thyme
- ¼ cup Oil optional
Instructions
- Wash all the ingredients perfectly and deseed the bell pepper.
- Transfer all the ingredients to a food processor and process till smooth or slightly coarse.
- If using a blender, chop fresh herbs and peppers and transfer them to a blender with some water. The water is to make the blade move easily.
- Use a spoon and scrape the sides of the processor or blender to make sure everything is combined.
- Transfer into a jar or bowl and cover tightly. Preserve in the refrigerator for up to a week. Or transfer it to ice cube trays and freeze for 3-5 months.
