This Plantain Frittata has the perfect twist of fried plantains and eggs and an absolutely wholesome, hearty and flavorful breakfast that's hard to beat. It has a beautiful balance of sweet and salty flavors, comes together super quick, and is great for the whole family.

Plantain Frittata originated in Italy, and it's almost similar to the French quiche but has different ingredients and methods of cooking. It is made by deep frying ripe plantains, sautรฉing some veggies, and adding them to the eggs cooked on the stovetop or oven. Proteins of choice can also be added. Recipe Ingredients
Plantain:ย This one's the hero ingredient, so make sure you choose one that's fresh, ripe, and firm to touch.
Eggs: Use large, free-range eggs. These will be the base for the frittata.
Veggies: You'll need some onion and celery for the flavor, as well as some other mixed veggies of your choice. Green beans, carrots, and peas are all great choices.
Sausage: To make the dish more hearty and protein-rich.
Seasonings: I used a mix of salt, black pepper, garlic powder, and chili flakes.
Chicken bouillon: To add a bit of savory and umami flavor.
Parsley: To garnish.

Variations & Substitutions
- To make the plantain frittata heartier, add some potatoes and tomatoes to the mix. Leafy greens like kale and spinach can also be great additions to consider.
- You can also consider adding other kinds of protein like salami, ham, and even shrimp.
- You can also top it with some shredded cheese towards the end for some extra deliciousness.
- If you're out of plantains or want to try something new, roasted sweet potatoes can offer a similar texture and sweetness.
How to Make Plantain Frittata
- Peel the plantains and cut them into rounds. Deep fry them till golden brown and set aside on an absorbent paper.
- Sautรฉ the onions and other veggies in some oil in a pan over medium heat. Remove and let it cool for about 3-5 minutes. Meanwhile, combine the eggs and seasonings in a medium bowl and whisk well to combine.
- Heat oil in a large pan over medium heat and add in the eggs. Quickly layer the fried plantains on it. Cover and let this cook for about 20 minutes. Remove the plantain frittata from heat and serve.
Top Tip
Preheat it to 350 degrees and prepare a greased baking pan if you want to make this in the oven. Pour the egg mixture into the pan and layer it with the fried plantains. Bake this for about 30 minutes or until the eggs are set.
Storing Leftovers
You can store the leftover plantain frittata in an airtight container in the refrigerator for up to 3 days and reheat it in the microwave or a pan.
If you're reheating it in the pan, make sure you keep the heat low, so that it doesn't end up burning.
Tips & Tricks to Make the Plantain Frittata
- Make sure you allow the sauteed veggies to cool down completely before you add them to the eggs, as the heat can scramble the eggs.
- Always grease the pan to avoid sticking. You can use a non-stick pan or a good quality cast iron skillet.
- If you're not a fan of deep frying, you can choose to air fry or bake the plantain slices, too!
- Make sure you cook the plantains on medium heat- if the heat is too high, they will end up getting burned, and if it is too low, it won't crisp up enough.
- Remember to slice the plantains in rounds of even thickness when slicing them. This will ensure they're all perfectly cooked.
- Arrange the plantains on the egg mixture quickly before the egg starts to cook. You want it to stick to the eggs.

Recipe FAQs
Ideally, ripe plantains are supposed to be firm to the touch and not very soft. If it is too ripe and smooth, it becomes mushy when fried, so keep that in mind. Also check for any soft spots or discoloration on the surface, and avoid picking plantains that have those.
You can, but you'll need to cook them for just the right amount of time. Since they're already ripe, they'll just need a few minutes to cook and brown up.
Be sure to cook the plantains until theyโre lightly crispy before adding the egg mixture. This ensures they retain a nice texture in the frittata. You can also pat them dry with a paper towel to remove excess moisture.

Plantain Frittata
Ingredients
- 2 ripe Plantains firm to touch ripe plantains
- 4 large Eggs
- 1 medium Onion chopped
- 1 teaspoon Garlic powder
- 1 cup Mixed veggies carrot, peas, green beans or any of your favorite.
- 2 Sausages chopped
- 1 Celery stalk chopped
- 2 Fresh parsley chopped
- ยฝ teaspoon Salt
- ยฝ teaspoon Bouillon
- ยฝ teaspoon Black pepper
- 1 teaspoon Chilli flakes optional
Instructions
- Peel and cut plantains into rounds of about ยผ inch thick.
- Deep fry plantains over medium heat until golden brown. Remove from the oil and place on an absorbent paper.
- Add 2 tablespoon oil to a pan. Sautรฉ onion for 1 minute. Add mixed veggies, celery, parsley, and sausage and stir fry until the veggies lightly soften. Remove and let it cool for about 3-5 minutes.
- Add the eggs to a medium bowl and lightly beat. Add the cooked veggies mix, garlic powder, salt, black pepper, bouillon and chilli flakes. Whisk to combine.
Using A Stove Top
- Add 1 tablespoon oil to a pan with a wide bottom over medium-low heat, pour the egg mixture inside and place the fried plantains on it. Note: You must hurry up to place the plantains so the egg doesn't cook and firm up like the plantains will not stick.
- Cover and let it cook on low heat for 20 minutes till the eggs cook and become firm.
- Cut and serve hot.
Using an Oven
- Preheat oven to 350โ and lightly grease a pan with a wide bottom.
- Pour the egg mixture into the pan and place the plantains on it.
- Put it in the middle rack of the oven and bake at 350โ for 30 minutes until the eggs firm up.
- Cut and serve hot.

You can do it A LOT simpler: fry the yellow bananas in sweet butter. Beat the eggs until foamy. Add the fried bananas on top of the eggs' mixture. Cover this with a lid...After 3 minutes cooking time, flip it to the other side and let it cook for three minutes. Ready to eat. Give it a try...
