What I Love About this Recipe
The combination of juicy, tender steak bites, crispy bite-sized pieces of potatoes, and a buttery garlic sauce makes this dish absolutely irresistible.
It's also super easy to make and needs minimal prep time.
And of course, the best part is you need just one pan to put it together- less mess and less cleanup to do after you're done.
Recipe Ingredients
Steak: I used sirloin steak, but this recipe is versatile. It allows you to use any tender cut, including strip steak, ribeye, or flank, depending on your preference.
Potatoes: I used yellow potatoes, but you can also use Yukon gold, red, or russet potatoes. Cut them into the same size so they cook evenly and quickly.
Herbs: For freshness and flavor.
Spices: I used a mix of black pepper, salt, and paprika to to enhance this dish's flavor and taste.
Worcestershire sauce: Adds some umami, savory depth to the steak and help tenderize it.
Butter: The base for the garlic butter sauce, which coats the steak and potatoes beautifully, adding richness and a creamy texture.
Hot sauce: Feel free to use Sriracha or any hot sauce you choose. This helps add a touch of heat and a tangy kick, balancing the richness of the butter and the savoriness of the garlic and herbs.
Garlic: For the savory flavor and aroma that pairs perfectly with the buttery base.

Variations & Substitutions
- If fresh herbs aren't available, dried rosemary and thyme can be used. Just remember to adjust the quantity, as dried herbs are more concentrated.
- Feel free to experiment with different hot sauces to find the perfect level of heat and flavor that suits your taste.
- You can also use spices like Creole, Cajun, Old Bay, and your favorite seasonings.

Storing Leftovers
Store your leftover garlic butter steak bites and potatoes in an airtight container in the refrigerator for up to 3 days. To reheat it, add a little oil to a pan on medium heat and reheat in the oven at 400F for about 5-7 minutes to bring back the crispiness.
You can also freeze these one-skillet garlic butter steak bites for up to 2 months. Just thaw it in the refrigerator overnight before reheating.
Tips & Tricks to Make Garlic Butter Steak Bites and Potatoes
- Do not overcrowd the pan when searing beef and potatoes. If you're making this steak and potato skillet for a gathering, cook in batches.
- Cook the beef or steak to the preferred tenderness. Avoid overcooking the meat, as it will become tough and chewy.
- If you're using a cast-iron pan, scrape it before making the sauce to avoid sticking.
- If you want extra gravy, add beef broth, cooking wine, or lemon juice. If you're using lemon juice, neutralize the acidity with honey or brown sugar.
Serving Ideas & Suggestions
Enjoy these garlic butter steak bites and potatoes on their own, or pair it with some bread to mop up all that delicious sauce. I love serving it with my Easy No Knead Baguette or Whole Wheat Dinner Rolls.
If you're looking for something healthier, team up the dish with some Mediterranean Cucumber Tomato Salad , Pasta salad or a simple Veggie Mac and Cheese to make it more filling.
Recipe FAQs
You can decrease the hot sauce or choose a milder variety to reduce the heat. Alternatively, if you prefer a mildly spicy steak bites recipe, you can omit the hot sauce altogether.
To meal prep or make the garlic butter steak bites and potatoes ahead of time, marinate the beef and pre-cook the potatoes up to a day in advance. When you're ready to cook, follow the remaining steps to finish the dish.
Cooking steak bites on a grill gives them a deliciously smoky char you'll love. Marinate and season the steak and potatoes as instructed, then grill them until they reach your desired doneness. Prepare the garlic butter sauce on the stovetop and toss the grilled steak and potatoes in the sauce before serving.
